In order to guarantee a high level of protection of human health and consumer interests, European legislation requires that certain foods and substances be authorised for use in foods for human consumption. The same applies to the use of statements to claim certain characteristics on the labelling of foodstuffs. This legislation requires that novel foods and traditional foods from third countries must be subjected to safety assessment and authorisation prior to their placing on the market and use in food. This also applies to the use of novel substances as additives. Furthermore, with regard to labelling, the use of new health claims is also subject to prior assessment and authorisation. On the other hand, the European legislation that regulates materials in contact with food also establishes evaluation and authorisation procedures in certain cases.
