Objective
The overall objective of the FOOD COMPUTING project is the development of the FOOD COMPUTING concept, firstly through the conceptualisation and design of a technological platform for the management and fusion of the multiple dimensions of data that represent or describe a food product, and secondly through the experimentation and development of a set of advanced computational algorithms and techniques for processing this data with the following objectives:
- Improve product formulation capabilities through the automatic discovery of substitute ingredients, using proprietary and third-party reference databases and access to scientific publications.
- Improve the ability to objectively compare food products by establishing new statistical similarity comparison procedures between agri-food products based on measurable objective physicochemical and/or microbiological and molecular characteristics.
- Improve innovation and new food product development processes through the use of new computational technologies and artificial intelligence, so that these products are more aligned with consumer needs and requirements, increasing acceptance among clients (retail) and end consumers while contributing to the satisfaction of their basic needs.
