Objective

The

main objective

of this strategic project is the integral valorisation of agricultural waste generated throughout the year in the Valencian Community to obtain value-added ingredients.

Activities

Extraction and characterisation of pectins from the different agricultural waste streams.
Valorisation of fibre-rich waste fractions through extrusion.
Development of new food products with the ingredients extracted from by-products.
Dissemination, Knowledge Transfer and Potential Industrialisation.
