Objective
The objective of the project is to research technological solutions for generating new fish-like analogue structures, deepening knowledge of new protein sources and their behaviour, as well as applying different variants of extrusion technology and other subsequent adaptation and improvement processes. The project will apply advanced process modelling tools with computational technologies to optimise these solutions.

Results
• Obtaining fish-like analogue structures through high- and low-moisture extrusion from different alternative proteins from legumes (pea, red lentil), cereals (rice), plants (canola, hemp) and other sources such as yeast or microalgae.
• Development of a computational model and advanced data processing that enables correlation between the characteristics of the initial protein raw material, the parameters applied in the extrusion process and the properties of the final structures obtained.
• Optimisation of the extrusion process for the development of new analogue products with improved organoleptic properties.
