New bio-based antimicrobial strategies

Objective

The overall objective of the project is to research and experimentally develop new active ingredients with antimicrobial activity against pathogens that appear in the food production chain and whose origin is associated with production animals (zoonotic pathogens). The application of these compounds is multisectoral, as they are intended to be incorporated into foods as preservation systems, used as additives in animal feed to reduce the use of antibiotics in animal production systems, and employed in industrial cleaning products to eliminate their presence throughout the food processing chain. The antimicrobial strategies proposed for development within the project consist of

  • Bacteriocins produced by lactic acid bacteria,
  • Bacteriophages and their endolysins, and
  • Antimicrobial peptides from protein matrices, obtained by biocatalysis

Activities

  1. Preliminary theoretical studies and evaluation of the current state of the art.
  2. Identification and production of bacteriocins
  3. Isolation, characterisation and stabilisation of bacteriophages
  4. Obtaining recombinant endolysins
  5. Characterisation of bioactive peptides with antimicrobial potential
  6. Evaluation and validation of the antimicrobial capacity of the active ingredients
  7. Bio-based antimicrobials: study of the legal framework
  8. Communication and dissemination.
  9. Transfer and promotion of results
  10. Management and coordination
