Objective
FOX’s unique approach will be to research and develop innovative small-scale technologies in mobile devices or flexible processing units for different applications for small and medium-sized enterprises and farmers in the fruit and vegetable sector in Europe. This will stimulate the transition from a centralised industry to regional hubs using innovative, flexible and sustainable technologies based on seasonal demand. For this reason, FOX understands the expectations of small food businesses regarding innovative processing solutions that are technically and economically feasible, while also taking into account the needs of the food chain and consumers. Consumers expect foods they can trust, as natural as possible. FOX will focus on mild processing technologies: low-temperature drying, mild extraction, light preservation using pulsed electric field or high pressure, innovative conditioning and packaging, and rapid quality testing. As a result, a variety of fruit and vegetables can be produced with superior physical and nutritional quality, thereby contributing to a healthier diet.
The FOX processes will be researched, with a TRL 5-6 target, and demonstrated in six European model regions and seven associated regions, for demonstration only, with a significant fruit and vegetable crop, covering both conventional and organic production. For each food circle, meaning the application of a FOX processing unit in a specific region, potential new business options will be explored and strategies will be designed to involve consumers in product development processes.
The impact of the FOX method on the environment, businesses, people and their health will be assessed and will serve as input for these developments. To promote the FOX method of small-scale technologies in regional food systems, a European stakeholder group of small-scale food processors will be created, which will also encourage dialogue to make policy-level recommendations. Guidelines and specific communications will be developed for each processing technology in order to reach potential users, approximately 2,000 companies.
