Neste contexto, no projeto <strong data-start=\"481\" data-end=\"496\">MEAT4FUTURE<\/strong>, ger\u00e1mos conhecimento aplicado e resultados tecnol\u00f3gicos que aproximam a carne cultivada da realidade industrial, refor\u00e7ando a <strong data-start=\"624\" data-end=\"691\">seguran\u00e7a, a reprodutibilidade e a escalabilidade dos processos<\/strong>.<\/p>\n<p data-start=\"694\" data-end=\"979\">O projeto MEAT4FUTURE contou com o apoio do <strong data-start=\"738\" data-end=\"747\">IVACE<\/strong> e do <strong data-start=\"753\" data-end=\"762\">FEDER<\/strong> e foi desenvolvido em colabora\u00e7\u00e3o com <strong data-start=\"801\" data-end=\"820\">Industrias Grau<\/strong> e <strong data-start=\"823\" data-end=\"845\">Embutidos Mart\u00ednez<\/strong>, com o objetivo de disponibilizar \u00e0s empresas <strong data-start=\"892\" data-end=\"928\">novas metodologias e ferramentas<\/strong> para inovar no dom\u00ednio das prote\u00ednas alternativas.<\/p>\n<p data-start=\"981\" data-end=\"1417\">No \u00e2mbito do MEAT4FUTURE, demos um passo adicional para transferir a carne cultivada para o contexto industrial. Trabalh\u00e1mos na melhoria da <strong data-start=\"1121\" data-end=\"1163\">qualidade, efici\u00eancia e escalabilidade<\/strong> dos processos envolvidos e avan\u00e7\u00e1mos na <strong data-start=\"1204\" data-end=\"1263\">obten\u00e7\u00e3o e caracteriza\u00e7\u00e3o de culturas celulares bovinas<\/strong>, avaliando o seu crescimento, diferencia\u00e7\u00e3o e seguran\u00e7a, com um foco claro: dotar as empresas de novas capacidades para inovar em prote\u00ednas alternativas.<\/p>\n<p><iframe title=\"YouTube video player\" src=\"https:\/\/www.youtube.com\/embed\/pR__DQtadU0?si=4xoZ4LV830lqecVQ\" width=\"800\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\" data-mce-fragment=\"1\"><span data-mce-type=\"bookmark\" style=\"display: inline-block; width: 0px; overflow: hidden; line-height: 0;\" class=\"mce_SELRES_start\">\ufeff<\/span><\/iframe><\/p>\n<h2 data-start=\"1424\" data-end=\"1483\"><strong data-start=\"1427\" data-end=\"1483\">Carne cultivada: Seguran\u00e7a e reprodutibilidade do ingrediente celular<\/strong><\/h2>\n<p data-start=\"1485\" data-end=\"1725\">Um dos principais desafios da carne cultivada \u00e9 garantir que o ingrediente celular se desenvolve segundo <strong data-start=\"1590\" data-end=\"1631\">crit\u00e9rios de seguran\u00e7a e consist\u00eancia<\/strong>. No projeto, identific\u00e1mos riscos relevantes e definimos <strong data-start=\"1689\" data-end=\"1724\">medidas de controlo e preven\u00e7\u00e3o<\/strong>.<\/p>\n<p data-start=\"1727\" data-end=\"2179\">Nos ensaios realizados, verific\u00e1mos a <strong data-start=\"1765\" data-end=\"1794\">aus\u00eancia de contaminantes<\/strong> em culturas celulares bovinas ap\u00f3s sucessivas subculturas efetuadas sem antibi\u00f3ticos, refor\u00e7ando a robustez do processo. Al\u00e9m disso, analis\u00e1mos a <strong data-start=\"1941\" data-end=\"1984\">reprodutibilidade em culturas prim\u00e1rias<\/strong>, em especial de c\u00e9lulas adiposas, confirmando a import\u00e2ncia de avaliar cada amostra de forma individualizada para assegurar um comportamento consistente e um adequado potencial de diferencia\u00e7\u00e3o.<\/p>\n<h3><strong><em><img decoding=\"async\" class=\"alignnone wp-image-185729 size-large\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/cultivo-celular-carne-cultivada-1024x576.jpg\" alt=\"cultivo celular carne cultivada\" width=\"1024\" height=\"576\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/cultivo-celular-carne-cultivada-1024x576.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/cultivo-celular-carne-cultivada-300x169.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/cultivo-celular-carne-cultivada-768x432.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/cultivo-celular-carne-cultivada.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/em><\/strong><\/h3>\n<h3 data-start=\"2186\" data-end=\"2248\"><strong data-start=\"2189\" data-end=\"2248\">Scaffolds comest\u00edveis com fontes proteicas alternativas<\/strong><\/h3>\n<p data-start=\"2250\" data-end=\"2629\">Para nos aproximarmos de formatos de produto mais realistas, trabalh\u00e1mos no desenvolvimento de <strong data-start=\"2345\" data-end=\"2370\">scaffolds comest\u00edveis<\/strong> baseados em prote\u00ednas alternativas. Foram obtidas estruturas texturizadas por extrus\u00e3o a partir de diferentes <strong data-start=\"2481\" data-end=\"2523\">mat\u00e9rias-primas vegetais e microbianas<\/strong>, selecionando-se as op\u00e7\u00f5es com melhor desempenho para valida\u00e7\u00e3o como <strong data-start=\"2593\" data-end=\"2628\">andaimes de crescimento celular<\/strong>.<\/p>\n<p data-start=\"2631\" data-end=\"2960\">Os ensaios demonstraram que, quando se incorpora crescimento celular, s\u00e3o refor\u00e7ados atributos como a <strong data-start=\"2733\" data-end=\"2759\">sucul\u00eancia e a textura<\/strong>, surgindo tamb\u00e9m um <strong data-start=\"2780\" data-end=\"2813\">aroma c\u00e1rneo mais percept\u00edvel<\/strong>, especialmente ap\u00f3s a confe\u00e7\u00e3o. Estes avan\u00e7os foram partilhados num f\u00f3rum cient\u00edfico internacional do setor, refor\u00e7ando a visibilidade do projeto.<\/p>\n<h3 data-start=\"2967\" data-end=\"3012\"><strong data-start=\"2970\" data-end=\"3012\">Carne cultivada: Processos mais eficientes e escal\u00e1veis<\/strong><\/h3>\n<p data-start=\"3014\" data-end=\"3361\">Outro eixo central do projeto foi o avan\u00e7o para <strong data-start=\"3062\" data-end=\"3104\">processos mais eficientes e escal\u00e1veis<\/strong>. Trabalh\u00e1mos em <strong data-start=\"3121\" data-end=\"3171\">estrat\u00e9gias de expans\u00e3o e manuseamento celular<\/strong> orientadas para melhorar a produtividade e definir crit\u00e9rios relevantes para o escalonamento industrial, com especial enfoque na <strong data-start=\"3301\" data-end=\"3360\">robustez operacional e na reprodutibilidade do processo<\/strong>.<\/p>\n<h3><strong><img decoding=\"async\" class=\"alignnone wp-image-185734 size-large\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/reactor-carne-cultovada-1024x576.jpg\" alt=\"reactor carne cultivada\" width=\"1024\" height=\"576\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/reactor-carne-cultovada-1024x576.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/reactor-carne-cultovada-300x169.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/reactor-carne-cultovada-768x432.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/reactor-carne-cultovada.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/strong><\/h3>\n<h3 data-start=\"3368\" data-end=\"3425\"><strong data-start=\"3371\" data-end=\"3425\">Otimiza\u00e7\u00e3o do biorreator atrav\u00e9s de simula\u00e7\u00f5es CFD<\/strong><\/h3>\n<p data-start=\"3427\" data-end=\"3782\">Foram tamb\u00e9m obtidos resultados-chave para otimizar o <strong data-start=\"3481\" data-end=\"3521\">desenho e a opera\u00e7\u00e3o de biorreatores<\/strong>, recorrendo a simula\u00e7\u00f5es <strong data-start=\"3547\" data-end=\"3585\">CFD (Computational Fluid Dynamics)<\/strong>. Esta abordagem permitiu analisar a mistura e a disponibilidade de oxig\u00e9nio, identificando oportunidades para melhorar a homogeneidade do processo e minimizar zonas com condi\u00e7\u00f5es menos favor\u00e1veis.<\/p>\n<p data-start=\"3784\" data-end=\"4001\">O trabalho evidencia a import\u00e2ncia do <strong data-start=\"3822\" data-end=\"3855\">desenho do sistema de aera\u00e7\u00e3o<\/strong> e do equil\u00edbrio entre uma oxigena\u00e7\u00e3o adequada e um <strong data-start=\"3907\" data-end=\"3939\">ambiente hidrodin\u00e2mico suave<\/strong>, particularmente relevante para culturas celulares sens\u00edveis.<\/p>\n<h3><strong><img decoding=\"async\" class=\"alignnone wp-image-185722 size-large\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/simulaciones-CFD-1024x576.jpg\" alt=\"simulaciones CFD cultivo celular\" width=\"1024\" height=\"576\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/simulaciones-CFD-1024x576.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/simulaciones-CFD-300x169.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/simulaciones-CFD-768x432.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/12\/simulaciones-CFD.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/strong><\/h3>\n<h3 data-start=\"4008\" data-end=\"4048\"><strong data-start=\"4011\" data-end=\"4048\">Prot\u00f3tipos e valida\u00e7\u00e3o de carne cultivada<\/strong><\/h3>\n<p data-start=\"4050\" data-end=\"4411\">Por fim, abord\u00e1mos o p\u00f3s-processamento para obter <strong data-start=\"4100\" data-end=\"4142\">por\u00e7\u00f5es modelo e prot\u00f3tipos de produto<\/strong>. Foram avaliadas formula\u00e7\u00f5es de <strong data-start=\"4175\" data-end=\"4212\">biomateriais para bioimpress\u00e3o 3D<\/strong>, com o objetivo de simular estruturas do tipo \u201cbife\u201d, e, em paralelo, desenvolvemos <strong data-start=\"4297\" data-end=\"4322\">hamb\u00fargueres h\u00edbridos<\/strong>, comparando formula\u00e7\u00f5es 100 % vegetais com formula\u00e7\u00f5es que incorporavam carne cultivada.<\/p>\n<p data-start=\"4413\" data-end=\"4895\">Os resultados evidenciam <strong data-start=\"4438\" data-end=\"4489\">vantagens tecnol\u00f3gicas nas formula\u00e7\u00f5es h\u00edbridas<\/strong>, especialmente ao n\u00edvel da compacta\u00e7\u00e3o, coes\u00e3o e integridade ap\u00f3s a confe\u00e7\u00e3o. Foi igualmente identificada a necessidade de ajustar par\u00e2metros t\u00e9rmicos para evitar um excesso de tostagem. Do ponto de vista sensorial, o perfil global manteve-se semelhante, com predomin\u00e2ncia de notas vegetais, abrindo linhas de melhoria orientadas para refor\u00e7ar o car\u00e1ter c\u00e1rneo sem comprometer a experi\u00eancia do consumidor.<\/p>\n<h2 data-start=\"4902\" data-end=\"4974\"><strong data-start=\"4905\" data-end=\"4974\">A carne cultivada como ingrediente funcional em matrizes h\u00edbridas<\/strong><\/h2>\n<p data-start=\"4976\" data-end=\"5423\">Em conjunto, os resultados do MEAT4FUTURE confirmam a <strong data-start=\"5030\" data-end=\"5124\">viabilidade tecnol\u00f3gica da carne cultivada como ingrediente funcional em matrizes h\u00edbridas<\/strong> e aportam avan\u00e7os relevantes em <strong data-start=\"5157\" data-end=\"5233\">seguran\u00e7a, processamento, escalabilidade e desenvolvimento de prot\u00f3tipos<\/strong>. Na AINIA, estes trabalhos refor\u00e7am o nosso posicionamento como <strong data-start=\"5298\" data-end=\"5335\">parceiro tecnol\u00f3gico da ind\u00fastria<\/strong> no desenvolvimento de solu\u00e7\u00f5es inovadoras e sustent\u00e1veis no \u00e2mbito das novas prote\u00ednas.<\/p>\n<p data-start=\"5425\" data-end=\"5830\">O projeto MEAT4FUTURE permitiu \u00e0 AINIA avan\u00e7ar no desenvolvimento de <strong data-start=\"5494\" data-end=\"5543\">conhecimento e capacidades tecnol\u00f3gicas chave<\/strong> para impulsionar a carne cultivada a partir de uma perspetiva <strong data-start=\"5606\" data-end=\"5640\">industrial, segura e escal\u00e1vel<\/strong>.
