Atrav\u00e9s de parcerias com empresas e institui\u00e7\u00f5es de investiga\u00e7\u00e3o, o projeto visa superar os desafios atuais na produ\u00e7\u00e3o em larga escala de carne cultivada e contribuir para o avan\u00e7o da ind\u00fastria.<\/p>\n<p data-start=\"852\" data-end=\"999\">No <strong data-start=\"855\" data-end=\"870\">MEAT4FUTURE<\/strong>, abordamos diferentes frentes tecnol\u00f3gicas para melhorar a produ\u00e7\u00e3o de carne cultivada, com especial foco nos seguintes aspetos:<\/p>\n<ul data-start=\"1001\" data-end=\"2071\">\n<li data-start=\"1001\" data-end=\"1234\">\n<p data-start=\"1003\" data-end=\"1234\"><strong data-start=\"1003\" data-end=\"1039\">Seguran\u00e7a do ingrediente celular<\/strong>: Analisaremos a seguran\u00e7a alimentar das c\u00e9lulas utilizadas na produ\u00e7\u00e3o, incluindo a dete\u00e7\u00e3o de pat\u00f3genos e contaminantes, e a caracteriza\u00e7\u00e3o das culturas celulares durante o seu desenvolvimento.<\/p>\n<\/li>\n<li data-start=\"1235\" data-end=\"1439\">\n<p data-start=\"1237\" data-end=\"1439\"><strong data-start=\"1237\" data-end=\"1290\">Desenvolvimento de suportes celulares comest\u00edveis<\/strong>: Investigaremos prote\u00ednas vegetais e polissacar\u00eddeos para criar estruturas de suporte que melhorem a textura e o valor nutricional do produto final.<\/p>\n<\/li>\n<li data-start=\"1440\" data-end=\"1680\">\n<p data-start=\"1442\" data-end=\"1680\"><strong data-start=\"1442\" data-end=\"1489\">Otimiza\u00e7\u00e3o dos bioprocessos em biorreatores<\/strong>: Estudaremos par\u00e2metros operacionais chave na propaga\u00e7\u00e3o e diferencia\u00e7\u00e3o celular, comparando linhagens celulares de mam\u00edferos e aves, com o objetivo de melhorar a escalabilidade do processo.<\/p>\n<\/li>\n<li data-start=\"1681\" data-end=\"1859\">\n<p data-start=\"1683\" data-end=\"1859\"><strong data-start=\"1683\" data-end=\"1717\">Formula\u00e7\u00e3o e p\u00f3s-processamento<\/strong>: Exploraremos alternativas para ajustar o produto final, por meio de diferentes opera\u00e7\u00f5es unit\u00e1rias e formula\u00e7\u00f5es adaptadas aos consumidores.<\/p>\n<\/li>\n<li data-start=\"1860\" data-end=\"2071\">\n<p data-start=\"1862\" data-end=\"2071\"><strong data-start=\"1862\" data-end=\"1900\">Quadro regulador e comercializa\u00e7\u00e3o<\/strong>: Atualizaremos as regulamenta\u00e7\u00f5es aplic\u00e1veis \u00e0 carne cultivada para facilitar a sua entrada no mercado como uma fonte de prote\u00edna alternativa, sustent\u00e1vel e de qualidade.<\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"2073\" data-end=\"2127\"><strong>Seguran\u00e7a alimentar e novas linhagens celulares<\/strong><\/h3>\n<p data-start=\"2129\" data-end=\"2601\">Um dos principais desafios na carne cultivada \u00e9 garantir a <strong><a href=\"https:\/\/www.ainia.com\/pt\/ensaios-em-digestor-dinamico-in-vitro-bioacessibilidade-e-ensaios-em-cultivo-celular-biodisponibilidade\/\">seguran\u00e7a alimentar do ingrediente celular<\/a><\/strong>. No <strong data-start=\"2235\" data-end=\"2250\">MEAT4FUTURE<\/strong>, desenvolveremos uma metodologia para caracterizar a qualidade e seguran\u00e7a das c\u00e9lulas, analisando a sua resist\u00eancia a contaminantes e avaliando a sua reprodutibilidade em diferentes processos de subcultivo. Al\u00e9m disso, expandiremos o estudo para novas esp\u00e9cies, incluindo algumas de peixe, otimizando as condi\u00e7\u00f5es de trabalho para cada tipo celular.<\/p>\n<h3 data-start=\"2603\" data-end=\"2657\"><strong>Suportes celulares inovadores e bioimpress\u00e3o 3D<\/strong><\/h3>\n<p data-start=\"2659\" data-end=\"3163\">O desenvolvimento de estruturas que permitam o crescimento celular \u00e9 um aspeto-chave para obter carne cultivada com caracter\u00edsticas organol\u00e9pticas semelhantes \u00e0 carne convencional. No <strong data-start=\"2843\" data-end=\"2858\">MEAT4FUTURE<\/strong>, investigaremos a aplica\u00e7\u00e3o de prote\u00ednas vegetais texturizadas e polissacar\u00eddeos na formula\u00e7\u00e3o de suportes celulares comest\u00edveis. Avaliaremos a combina\u00e7\u00e3o de diferentes prote\u00ednas vegetais para melhorar o perfil nutricional e aplicaremos a bioimpress\u00e3o 3D para melhorar a estrutura dos andaimes celulares.<\/p>\n<h3 data-start=\"3165\" data-end=\"3226\"><strong>Otimiza\u00e7\u00e3o de biorreatores e escalabilidade industrial<\/strong><\/h3>\n<p data-start=\"3228\" data-end=\"3727\">Para que a carne cultivada seja vi\u00e1vel comercialmente, \u00e9 essencial otimizar as condi\u00e7\u00f5es operacionais nos biorreatores. No <strong data-start=\"3351\" data-end=\"3366\">MEAT4FUTURE<\/strong>, estudaremos os par\u00e2metros cr\u00edticos de propaga\u00e7\u00e3o e diferencia\u00e7\u00e3o celular em reatores, avaliando a transfer\u00eancia de mat\u00e9ria, tempos de resid\u00eancia e esfor\u00e7os de cisalhamento. Utilizaremos ferramentas de c\u00e1lculo avan\u00e7adas para desenhar sistemas que minimizem os problemas de cisalhamento e otimizem o consumo de nutrientes, reduzindo assim os custos de produ\u00e7\u00e3o.<\/p>\n<h2 data-start=\"420\" data-end=\"436\"><strong>Carne cultivada: Rumo a um modelo de produ\u00e7\u00e3o mais sustent\u00e1vel<\/strong><\/h2>\n<p data-start=\"3783\" data-end=\"4193\">Com o projeto <strong data-start=\"3797\" data-end=\"3812\">MEAT4FUTURE<\/strong>, buscamos posicionar <strong data-start=\"3834\" data-end=\"3843\">AINIA<\/strong> e a <strong data-start=\"3848\" data-end=\"3873\">Comunidade Valenciana<\/strong> na vanguarda da pesquisa em carne cultivada.
