Falamos tamb\u00e9m das a\u00e7\u00f5es que podem ser tomadas para que as nossas ind\u00fastrias e empresas estejam preparadas para este novo quadro legislativo, dos produtos que podem ser mais afetados, da complexidade anal\u00edtica do seu controlo, bem como das a\u00e7\u00f5es que estamos a realizar para apoiar o setor na preven\u00e7\u00e3o e controlo deste perigo alimentar.<\/p>\n<h2 data-start=\"774\" data-end=\"792\"><strong data-start=\"777\" data-end=\"792\">MOSH e MOAH<\/strong><\/h2>\n<p data-start=\"794\" data-end=\"987\">A presen\u00e7a de <strong data-start=\"808\" data-end=\"859\">hidrocarbonetos de \u00f3leos minerais (MOSH e MOAH)<\/strong> nos alimentos \u00e9 uma preocupa\u00e7\u00e3o crescente na Europa. Estes compostos, derivados do petr\u00f3leo, dividem-se em dois grandes grupos:<\/p>\n<ul data-start=\"989\" data-end=\"1379\">\n<li data-start=\"989\" data-end=\"1211\">\n<p data-start=\"991\" data-end=\"1211\"><strong data-start=\"991\" data-end=\"1027\">MOSH (Hidrocarbonetos saturados)<\/strong>: acumulam-se em \u00f3rg\u00e3os como o f\u00edgado, a ba\u00e7o e o tecido adiposo. Embora ainda n\u00e3o sejam totalmente conhecidos os seus efeitos a longo prazo, a sua persist\u00eancia \u00e9 motivo de vigil\u00e2ncia.<\/p>\n<\/li>\n<li data-start=\"1212\" data-end=\"1379\">\n<p data-start=\"1214\" data-end=\"1379\"><strong data-start=\"1214\" data-end=\"1251\">MOAH (Hidrocarbonetos arom\u00e1ticos)<\/strong>: especialmente os que cont\u00eam tr\u00eas ou mais an\u00e9is arom\u00e1ticos, est\u00e3o associados \u00e0 <strong data-start=\"1331\" data-end=\"1378\">genotoxicidade e ao potencial carcinog\u00e9nico<\/strong>.<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"1381\" data-end=\"1780\">A contamina\u00e7\u00e3o por este tipo de subst\u00e2ncias nos alimentos pode ocorrer em m\u00faltiplos pontos da cadeia alimentar e pode ter v\u00e1rias origens: <strong data-start=\"1519\" data-end=\"1644\">materiais em contacto com os alimentos, lubrificantes industriais, embalagens recicladas, e tamb\u00e9m contamina\u00e7\u00e3o ambiental<\/strong>, o que torna o controlo dif\u00edcil e relevante. A EFSA identificou v\u00e1rias fontes potenciais e atualizou a sua avalia\u00e7\u00e3o de riscos em 2023.<\/p>\n<p data-start=\"1782\" data-end=\"1928\">Relativamente aos produtos afetados, os dados mais recentes indicam que as categorias de produtos que acumulam mais notifica\u00e7\u00f5es no RASFF incluem:<\/p>\n<ul data-start=\"1930\" data-end=\"2026\">\n<li data-start=\"1930\" data-end=\"1948\">\n<p data-start=\"1932\" data-end=\"1948\">Gorduras e \u00f3leos<\/p>\n<\/li>\n<li data-start=\"1949\" data-end=\"1984\">\n<p data-start=\"1951\" data-end=\"1984\">Cereais e produtos de panifica\u00e7\u00e3o<\/p>\n<\/li>\n<li data-start=\"1985\" data-end=\"2006\">\n<p data-start=\"1987\" data-end=\"2006\">Ervas e especiarias<\/p>\n<\/li>\n<li data-start=\"2007\" data-end=\"2026\">\n<p data-start=\"2009\" data-end=\"2026\">Cacau, caf\u00e9 e ch\u00e1<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2009\" data-end=\"2026\"><img decoding=\"async\" class=\"alignnone size-large wp-image-182364\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/09\/infographic-moh-in-food_0.png-1-1-1024x517.jpg\" alt=\"EFSA MOSH MOA information\" width=\"1024\" height=\"517\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/09\/infographic-moh-in-food_0.png-1-1-1024x517.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/09\/infographic-moh-in-food_0.png-1-1-300x152.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/09\/infographic-moh-in-food_0.png-1-1-768x388.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/09\/infographic-moh-in-food_0.png-1-1.jpg 1400w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/p>\n<p data-start=\"2028\" data-end=\"2094\"><em data-start=\"2028\" data-end=\"2094\">Fig. 1 \u2013 <strong><a href=\"https:\/\/www.efsa.europa.eu\/pt\/infographics\/mineral-oil-hydrocarbons-food\">Principais fontes alimentares de exposi\u00e7\u00e3o. Fonte: EFSA<\/a><\/strong><\/em><\/p>\n<h2 data-start=\"2096\" data-end=\"2137\"><strong data-start=\"2099\" data-end=\"2137\">Quadro Regulamentar Atual e Futuro<\/strong><\/h2>\n<p data-start=\"2139\" data-end=\"2476\">Embora atualmente n\u00e3o exista um quadro legislativo espec\u00edfico, aplica-se o <strong data-start=\"2214\" data-end=\"2240\">princ\u00edpio da precau\u00e7\u00e3o<\/strong>, bem como a obriga\u00e7\u00e3o geral dos operadores de n\u00e3o introduzir no mercado produtos que possam comprometer a sa\u00fade do consumidor. No entanto, a UE aplica j\u00e1 <strong data-start=\"2395\" data-end=\"2436\">limites de atua\u00e7\u00e3o harmonizados (LOQ)<\/strong> para os <strong data-start=\"2445\" data-end=\"2475\">MOAH em controlos oficiais<\/strong>:<\/p>\n<ul data-start=\"2478\" data-end=\"2613\">\n<li data-start=\"2478\" data-end=\"2534\">\n<p data-start=\"2480\" data-end=\"2534\"><strong>0,5 mg\/kg<\/strong> em alimentos secos com baixo teor de gordura<\/p>\n<\/li>\n<li data-start=\"2535\" data-end=\"2583\">\n<p data-start=\"2537\" data-end=\"2583\"><strong>1 mg\/kg<\/strong> em alimentos com teor m\u00e9dio de gordura<\/p>\n<\/li>\n<li data-start=\"2584\" data-end=\"2613\">\n<p data-start=\"2586\" data-end=\"2613\"><strong>2 mg\/kg<\/strong> em gorduras e \u00f3leos<\/p>\n<\/li>\n<\/ul>\n<p data-start=\"2615\" data-end=\"3141\">\u00c9 importante destacar que Portugal tem sido tanto o pa\u00eds de origem como de destino de v\u00e1rias alertas no RASFF, em aplica\u00e7\u00e3o desses limites harmonizados, o que sublinha a necessidade de <strong data-start=\"2800\" data-end=\"2859\">agir proativamente por parte dos operadores alimentares<\/strong>. Desde 2021, registaram-se 30 notifica\u00e7\u00f5es no RASFF relacionadas com estes contaminantes em produtos de diferentes naturezas distribu\u00eddos no nosso pa\u00eds, bem como 9 notifica\u00e7\u00f5es em que Portugal foi o pa\u00eds de origem dos produtos, principalmente em azeite de baga\u00e7o de oliva e azeite.<\/p>\n<p data-start=\"3143\" data-end=\"3451\">Prev\u00ea-se que em <strong data-start=\"3159\" data-end=\"3167\">2026<\/strong> sejam publicadas as regulamenta\u00e7\u00f5es que impor\u00e3o <strong data-start=\"3216\" data-end=\"3253\">Limites M\u00e1ximos de Res\u00edduos (LMR)<\/strong> para <strong data-start=\"3259\" data-end=\"3267\">MOAH<\/strong>, aplic\u00e1veis a mat\u00e9rias-primas, produtos interm\u00e9dios e finais. O <strong data-start=\"3332\" data-end=\"3363\">7.\u00ba rascunho do regulamento<\/strong> j\u00e1 contempla categorias espec\u00edficas, como alimenta\u00e7\u00e3o infantil, suplementos e aditivos.<\/p>\n<h2 data-start=\"3453\" data-end=\"3480\"><strong data-start=\"3456\" data-end=\"3480\">Estamos a Medir Bem?<\/strong><\/h2>\n<p data-start=\"3482\" data-end=\"3881\">As t\u00e9cnicas anal\u00edticas utilizadas atualmente (LC-GC-FID) apresentam limita\u00e7\u00f5es importantes: n\u00e3o permitem distinguir entre os <strong data-start=\"3607\" data-end=\"3622\">MOSH e MOAH<\/strong> de origem natural, tecnol\u00f3gica ou contaminante. Isto pode levar a <strong data-start=\"3689\" data-end=\"3707\">sobrestima\u00e7\u00f5es<\/strong>. Fonte: AINIA<\/em><\/p>\n<p data-start=\"3975\" data-end=\"4579\">Neste sentido, a AINIA est\u00e1 a desenvolver atualmente um projeto apoiado pelo IVACE (Instituto Valenciano de Competitividade Empresarial) e cofinanciado pelo Fundo Europeu de Desenvolvimento Regional, no \u00e2mbito do qual vamos utilizar estas t\u00e9cnicas avan\u00e7adas <strong data-start=\"4233\" data-end=\"4249\">GCxGC-MS-FID<\/strong> para desenvolver solu\u00e7\u00f5es tecnol\u00f3gicas para o diagn\u00f3stico de pontos cr\u00edticos de contamina\u00e7\u00e3o por <strong data-start=\"4347\" data-end=\"4383\">hidrocarbonetos saturados (MOSH)<\/strong> e <strong data-start=\"4386\" data-end=\"4407\">arom\u00e1ticos (MOAH)<\/strong> em alimentos, distinguindo-os de outras origens, como a natural ou constitutiva dos pr\u00f3prios alimentos, que n\u00e3o resultam de contamina\u00e7\u00e3o e, portanto, n\u00e3o s\u00e3o indesej\u00e1veis.<\/p>\n<p data-start=\"4581\" data-end=\"4806\">No entanto, atualmente estamos tamb\u00e9m em posi\u00e7\u00e3o de fornecer controles em alimentos \u00e0s ind\u00fastrias ou empresas solicitantes, utilizando as t\u00e9cnicas comumente aceites atualmente (LC-GC-FID), dando resposta \u00e0s suas necessidades.<img decoding=\"async\" class=\"alignnone size-large wp-image-180201\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-1024x110.png\" alt=\"logo ivace feder 2025\" width=\"1024\" height=\"110\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-1024x110.png 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-300x32.png 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-768x82.png 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-1536x164.png 1536w, https:\/\/www.ainia.com\/wp-content\/uploads\/2021\/09\/IVACEUEdeclaracion-cs-negro-1-2048x219.png 2048w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/p>\n<h2 data-start=\"4808\" data-end=\"4851\"><strong data-start=\"4811\" data-end=\"4851\">A\u00e7\u00f5es a Implementar pelos Operadores<\/strong><\/h2>\n<p data-start=\"4853\" data-end=\"5233\">Para se prepararem para a nova legisla\u00e7\u00e3o, \u00e9 importante ter em conta que, dado o tipo de efeitos que os <strong data-start=\"4957\" data-end=\"4965\">MOAH<\/strong> podem ter sobre a sa\u00fade, se espera que seja aplicado o princ\u00edpio ALARA (\u201ct\u00e3o baixo quanto razoavelmente poss\u00edvel\u201d). Isto provavelmente coincidir\u00e1 com os limites de quantifica\u00e7\u00e3o do m\u00e9todo adotado pelo laborat\u00f3rio europeu de refer\u00eancia para este tipo de contaminantes.<\/p>\n<p data-start=\"5235\" data-end=\"5312\">Neste sentido, as a\u00e7\u00f5es que devem ser implementadas pelos operadores incluem:<\/p>\n<ul data-start=\"5314\" data-end=\"5641\">\n<li data-start=\"5314\" data-end=\"5443\">\n<p data-start=\"5316\" data-end=\"5443\"><strong data-start=\"5316\" data-end=\"5376\">Implementar controlos anal\u00edticos adequados e atualizados<\/strong>, de forma a avaliar a qualidade dos seus produtos a este respeito.<\/p>\n<\/li>\n<li data-start=\"5444\" data-end=\"5575\">\n<p data-start=\"5446\" data-end=\"5575\"><strong data-start=\"5446\" data-end=\"5516\">Revisar os seus processos e materiais em contacto com os alimentos<\/strong>, caso se detetem desvios em rela\u00e7\u00e3o aos limites previstos.<\/p>\n<\/li>\n<li data-start=\"5576\" data-end=\"5641\">\n<p data-start=\"5578\" data-end=\"5641\"><strong data-start=\"5578\" data-end=\"5640\">Avaliar fornecedores e mat\u00e9rias-primas com risco potencial<\/strong>.<\/p>\n<\/li>\n<\/ul>\n<h2 data-start=\"5643\" data-end=\"5700\"><strong data-start=\"5646\" data-end=\"5700\">Outras A\u00e7\u00f5es da AINIA para Prevenir Riscos Futuros<\/strong><\/h2>\n<p data-start=\"5702\" data-end=\"6231\">Neste ponto, queremos destacar o compromisso que assumimos ao constituir um <strong><a href=\"https:\/\/www.ainia.com\/pt\/ainia-seali-hub\/\">Hub de empresas com elevado compromisso com a seguran\u00e7a alimentar<\/a><\/strong>, com as quais partilhamos informa\u00e7\u00e3o atualizada sobre riscos emergentes e alertas precoces de seguran\u00e7a alimentar. Estas a\u00e7\u00f5es s\u00e3o desenvolvidas atrav\u00e9s do <strong data-start=\"6000\" data-end=\"6013\">SEALI-Hub<\/strong>, servi\u00e7o da AINIA, ao qual est\u00e3o atualmente associadas empresas como <strong data-start=\"6083\" data-end=\"6196\">EROSKI, MERCADONA, CONSUM, HIJOS DE RIVERA (ESTRELLA DE GALICIA), VALLS COMPANYS, FLORETTE, PROFAND e GULLON<\/strong>. O Hub baseia-se em cinco pilares:<\/p>\n<ul data-start=\"6233\" data-end=\"6501\">\n<li data-start=\"6233\" data-end=\"6286\">\n<p data-start=\"6235\" data-end=\"6286\">Sistema de informa\u00e7\u00e3o di\u00e1ria sobre Alertas Precoces<\/p>\n<\/li>\n<li data-start=\"6287\" data-end=\"6333\">\n<p data-start=\"6289\" data-end=\"6333\">Relat\u00f3rio trimestral sobre Riscos Emergentes<\/p>\n<\/li>\n<li data-start=\"6334\" data-end=\"6384\">\n<p data-start=\"6336\" data-end=\"6384\">Relat\u00f3rio Anual e outros documentos de interesse<\/p>\n<\/li>\n<li data-start=\"6385\" data-end=\"6415\">\n<p data-start=\"6387\" data-end=\"6415\">Acesso ilimitado a consultas<\/p>\n<\/li>\n<li data-start=\"6416\" data-end=\"6501\">\n<p data-start=\"6418\" data-end=\"6501\">Tr\u00eas eventos t\u00e9cnicos e de networking anuais, exclusivos para as empresas aderentes<\/p>\n<\/li>\n<\/ul>\n<h2 data-start=\"6503\" data-end=\"6519\"><strong data-start=\"6506\" data-end=\"6519\">Conclus\u00e3o<\/strong><\/h2>\n<p data-start=\"6521\" data-end=\"6736\">A problem\u00e1tica da preven\u00e7\u00e3o e controlo da contamina\u00e7\u00e3o por <strong data-start=\"6580\" data-end=\"6612\">MOAH, e em menor medida MOSH<\/strong>, apresenta um novo desafio para os operadores alimentares, que devem tomar medidas para se adaptarem \u00e0 legisla\u00e7\u00e3o vindoura.<\/p>\n<p data-start=\"6738\" data-end=\"7223\">Por outro lado, na AINIA, estamos a trabalhar no aperfei\u00e7oamento de m\u00e9todos de controlo avan\u00e7ados que evitem a sobrestima\u00e7\u00e3o dos resultados anal\u00edticos (GCxGC-MS-FID). Paralelamente, j\u00e1 podemos fornecer <a href=\"https:\/\/www.ainia.com\/pt\/servicos-de-laboratorio\/\"><strong data-start=\"6940\" data-end=\"7018\">controles em alimentos utilizando as t\u00e9cnicas atualmente aceites LC-GC-FID<\/strong><\/a>, bem como <strong data-start=\"7029\" data-end=\"7159\">solu\u00e7\u00f5es para manter as ind\u00fastrias permanentemente atualizadas sobre riscos emergentes e alertas precoces atrav\u00e9s do SEALI-Hub<\/strong>, ajudando o setor a antecipar este tipo de situa\u00e7\u00f5es no futuro.<\/p>\n<\/body><\/html>","protected":false},"excerpt":{"rendered":"<p>Neste artigo, abordamos de forma geral a problem\u00e1tica relacionada com o controlo de MOSH e MOAH nos alimentos, contaminantes que ser\u00e3o provavelmente regulamentados pela legisla\u00e7\u00e3o europeia num prazo inferior a um ano.
