{"id":55773,"date":"2020-01-01T00:00:00","date_gmt":"2020-01-01T00:00:00","guid":{"rendered":"https:\/\/ainia.endesarrollo.pro\/transparencia\/ivace-feder-proalt-ii\/"},"modified":"2020-01-01T00:00:00","modified_gmt":"2020-01-01T00:00:00","slug":"ivace-feder-proalt-ii","status":"publish","type":"transparencia","link":"https:\/\/www.ainia.com\/fr\/transparence\/ivace-feder-proalt-ii\/","title":{"rendered":"IVACE &#8211; FEDER ProALT II"},"content":{"rendered":"<p style=\"text-align: justify;\">\n<h2>Objectif<\/h2>\n<p style=\"text-align: justify;\">L\u2019 <\/p>\n<h2>objectif g\u00e9n\u00e9ral<\/h2>\n<p>du pr\u00e9sent projet consiste en <strong>l\u2019obtention, la production et l\u2019\u00e9valuation de nouvelles sources alternatives de prot\u00e9ines qui, gr\u00e2ce \u00e0 leur transformation et adaptation technologique, permettront d\u2019obtenir de nouveaux ingr\u00e9dients prot\u00e9iques aux propri\u00e9t\u00e9s techno-fonctionnelles et nutritionnelles am\u00e9lior\u00e9es. <\/strong><\/p>\n<p style=\"text-align: justify;\">Le projet adopte une approche int\u00e9grale : depuis la recherche de nouvelles sources prot\u00e9iques, leur transformation pour l\u2019obtention d\u2019ingr\u00e9dients aux propri\u00e9t\u00e9s technologiques et saines d\u2019int\u00e9r\u00eat, jusqu\u2019\u00e0 l\u2019\u00e9valuation de leur applicabilit\u00e9 dans des syst\u00e8mes mod\u00e8les d\u2019aliments. Pour atteindre l\u2019objectif g\u00e9n\u00e9ral, les objectifs particuliers suivants sont pr\u00e9sent\u00e9s pour la <strong>pr\u00e9sente ann\u00e9e :<\/strong> <\/p>\n<ul style=\"text-align: justify;\">\n<li>Rechercher et produire des sources prot\u00e9iques alternatives \u00e0 haute valeur biologique et\/ou technologique : lemna, insectes et <em>single cell protein<\/em> (SCP). Produire la vari\u00e9t\u00e9 de lemna s\u00e9lectionn\u00e9e lors de l\u2019ann\u00e9e pr\u00e9c\u00e9dente (lemna gibba), travailler \u00e0 la g\u00e9n\u00e9ration de <em>Single Cell Protein<\/em> (SCP) en tenant compte de crit\u00e8res de productivit\u00e9 et de qualit\u00e9 prot\u00e9ique, et disposer de mat\u00e9riel issu d\u2019insectes riche en prot\u00e9ines. <\/li>\n<li>D\u00e9velopper un syst\u00e8me de contr\u00f4le de la croissance de la lemna bas\u00e9 sur le traitement num\u00e9rique de l\u2019image et le <em>Machine Learning.<\/em><\/li>\n<li>Appliquer des outils computationnels pour \u00e9valuer la viabilit\u00e9 peptidique et l\u2019optimisation de proc\u00e9d\u00e9s enzymatiques pour l\u2019obtention de peptides bioactifs \u00e0 partir de <em>single cell protein.<\/em><\/li>\n<li>Extraire, concentrer et obtenir des fractions prot\u00e9iques et\/ou des peptides \u00e0 partir de nouvelles sources de prot\u00e9ines par l\u2019application de diff\u00e9rentes technologies (extraction solide-liquide, fluides supercritiques, op\u00e9rations physico-chimiques, utilisation de membranes de filtration, hydrolyse enzymatique ou chimique, etc.).<\/li>\n<li>Travailler sur la fonctionnalisation et l\u2019adaptation d\u2019ingr\u00e9dients et\/ou de fractions prot\u00e9iques afin de renforcer les propri\u00e9t\u00e9s technologiques et\/ou saines gr\u00e2ce \u00e0 l\u2019application de diff\u00e9rents proc\u00e9d\u00e9s technologiques (modifications enzymatiques et chimiques, syst\u00e8mes de d\u00e9shydratation, etc.).<\/li>\n<li>Approfondir les m\u00e9thodologies pour l\u2019\u00e9valuation des propri\u00e9t\u00e9s technologiques des nouveaux ingr\u00e9dients prot\u00e9iques \u00e0 partir de param\u00e8tres intrins\u00e8ques \u00e0 la nature m\u00eame des sources prot\u00e9iques ou comme cons\u00e9quence des modifications qu\u2019elles peuvent avoir subies par l\u2019application des diff\u00e9rentes op\u00e9rations de transformation (solubilit\u00e9, capacit\u00e9 \u00e9mulsifiante, capacit\u00e9 g\u00e9lifiante, capacit\u00e9 de r\u00e9tention d\u2019eau, viscosit\u00e9, capacit\u00e9 de gonflement, etc.).<\/li>\n<li>\u00c9valuer les propri\u00e9t\u00e9s nutritionnelles et biologiques des ingr\u00e9dients prot\u00e9iques d\u00e9velopp\u00e9s (composition nutritionnelle, macro et micro\u00e9l\u00e9ments, digestibilit\u00e9 des prot\u00e9ines, \u00e9valuation in vitro du transport intestinal des acides amin\u00e9s, caract\u00e9risation in vitro des propri\u00e9t\u00e9s saines).<\/li>\n<li>\u00c9valuer l\u2019applicabilit\u00e9 potentielle des nouveaux ingr\u00e9dients prot\u00e9iques obtenus tout au long du projet dans des syst\u00e8mes alimentaires mod\u00e8les.<\/li>\n<li>R\u00e9aliser un encadrement juridique pour la commercialisation comme ingr\u00e9dient alimentaire, ou aliment des ingr\u00e9dients prot\u00e9iques obtenus \u00e0 partir des nouvelles sources propos\u00e9es : SCP et insectes et examiner les changements qui ont pu se produire par rapport \u00e0 l\u2019ann\u00e9e pr\u00e9c\u00e9dente dans le cas de la lemna.<\/li>\n<li>R\u00e9aliser une \u00e9tude de la durabilit\u00e9 environnementale pour la production des diff\u00e9rents ingr\u00e9dients prot\u00e9iques travaill\u00e9s.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">\n<h2>Activit\u00e9s<\/h2>\n<p style=\"text-align: justify;\">1. Production de lemna et fourniture d\u2019insectes comme nouvelles sources de prot\u00e9ines.<br \/>\n2. G\u00e9n\u00e9ration de <em>Single-Cell Protein<\/em> (SCP)<br \/>\n3. Proc\u00e9d\u00e9s de transformation de diff\u00e9rentes sources prot\u00e9iques pour l\u2019obtention de nouveaux ingr\u00e9dients am\u00e9lior\u00e9s<br \/>\n4. \u00c9valuation de l\u2019applicabilit\u00e9 des nouveaux ingr\u00e9dients dans des syst\u00e8mes mod\u00e8les d\u2019aliments<br \/>\n5. Encadrement juridique et durabilit\u00e9 environnementale<br \/>\n6. Diffusion<br \/>\n7. Transfert et promotion des r\u00e9sultats<br \/>\n8.
