Sa logique est anticipative : il analyse chaque \u00e9tape de la production, depuis la r\u00e9ception des mati\u00e8res premi\u00e8res jusqu\u2019\u00e0 la distribution, en identifiant o\u00f9 les risques peuvent appara\u00eetre et comment ils doivent \u00eatre ma\u00eetris\u00e9s.<\/p>\n<p>Ce syst\u00e8me est obligatoire pour les <strong>entreprises alimentaires dans l\u2019Union europ\u00e9enne<\/strong> et constitue la base des normes internationales telles que <strong>IFS, BRCGS ou FSSC 22000.<\/strong><\/p>\n<\/section>\n<section id=\"definicion-plan-appcc\">\n<h2>D\u00e9finition du plan HACCP<\/h2>\n<p>Alors que le HACCP fait r\u00e9f\u00e9rence au syst\u00e8me m\u00e9thodologique, le <strong>plan HACCP<\/strong> est le document op\u00e9rationnel qui pr\u00e9cise comment ce syst\u00e8me est appliqu\u00e9 dans une entreprise ou un processus sp\u00e9cifique.<\/p>\n<p>Le plan HACCP comprend :<\/p>\n<ul>\n<li>L\u2019identification des dangers associ\u00e9s au produit et au processus.<\/li>\n<li>La d\u00e9termination des points critiques de contr\u00f4le (CCP).<\/li>\n<li>Les limites critiques \u00e9tablies.<\/li>\n<li>Les syst\u00e8mes de surveillance et de contr\u00f4le.<\/li>\n<li>Les actions correctives.<\/li>\n<li>Les proc\u00e9dures de v\u00e9rification.<\/li>\n<li>Le syst\u00e8me de documentation et d\u2019enregistrements.<\/li>\n<\/ul>\n<p>En d\u00e9finitive, le plan HACCP traduit l\u2019approche th\u00e9orique en une proc\u00e9dure pratique, personnalis\u00e9e et auditable.<\/p>\n<\/section>\n<section id=\"appcc-plan-seguridad-alimentaria\">\n<h2>HACCP et plan de s\u00e9curit\u00e9 alimentaire : est-ce la m\u00eame chose ?<\/h2>\n<p>Bien qu\u2019ils reposent sur la m\u00eame base m\u00e9thodologique, il existe des diff\u00e9rences importantes :<\/p>\n<ul>\n<li><strong>Un plan HACCP<\/strong> se concentre sp\u00e9cifiquement sur l\u2019identification et la ma\u00eetrise des dangers \u00e0 travers les sept principes.<\/li>\n<li><strong>Un plan de s\u00e9curit\u00e9 alimentaire<\/strong> a une port\u00e9e plus large et int\u00e8gre, en plus de l\u2019\u00e9tude HACCP, d\u2019autres programmes tels que les programmes pr\u00e9requis d\u2019hygi\u00e8ne (PRP), la gestion des fournisseurs, les plans de d\u00e9fense alimentaire (food defense) et la tra\u00e7abilit\u00e9.<\/li>\n<\/ul>\n<p>On peut donc affirmer que le HACCP constitue le noyau technique d\u2019un plan de s\u00e9curit\u00e9 alimentaire, mais que ce dernier adopte une vision plus globale et int\u00e9gr\u00e9e.<\/p>\n<\/section>\n<section id=\"principios-appcc\">\n<h2>Les sept principes d\u2019un plan HACCP<\/h2>\n<p>Le syst\u00e8me HACCP repose sur sept principes internationalement reconnus, d\u00e9finis par la FAO\/OMS (Codex Alimentarius), qui constituent la base pour garantir l\u2019innocuit\u00e9 alimentaire. Ces principes structurent l\u2019analyse des dangers et la mise en \u0153uvre du plan.<\/p>\n<h3><strong>1. R\u00e9aliser une analyse des dangers<\/strong><\/h3>\n<p>Identifier tous les dangers potentiels (biologiques, chimiques et physiques ainsi que les allerg\u00e8nes et les risques radioactifs) associ\u00e9s \u00e0 chaque \u00e9tape du processus de production.<\/p>\n<h3><strong>2.
