{"id":184533,"date":"2025-11-17T09:39:11","date_gmt":"2025-11-17T07:39:11","guid":{"rendered":"https:\/\/www.ainia.com\/?p=184533"},"modified":"2025-11-17T09:51:10","modified_gmt":"2025-11-17T07:51:10","slug":"controle-en-ligne-des-proteines-dans-les-confiseries-grace-a-la-spectroscopie-nir-cas-de-reussite-avec-trolli","status":"publish","type":"post","link":"https:\/\/www.ainia.com\/fr\/ainia-news\/controle-en-ligne-des-proteines-dans-les-confiseries-grace-a-la-spectroscopie-nir-cas-de-reussite-avec-trolli\/","title":{"rendered":"Contr\u00f4le en ligne des prot\u00e9ines dans les confiseries gr\u00e2ce \u00e0 la spectroscopie NIR : cas de r\u00e9ussite avec TROLLI"},"content":{"rendered":"<html><body><div class=\"wpb-content-wrapper\"><p>[vc_row][vc_column][vc_column_text css=\u201d\u201d]Chez AINIA, nous avons collabor\u00e9 avec <strong data-start=\"489\" data-end=\"499\">TROLLI<\/strong> pour d\u00e9montrer qu\u2019il est possible de mesurer et de pr\u00e9dire en temps r\u00e9el la teneur en prot\u00e9ines des masses de confiserie au moyen de la spectroscopie dans le proche infrarouge (<em data-start=\"677\" data-end=\"698\">NIR \u2013 Near Infrared<\/em>).<\/p>\n<h2><strong>Spectroscopie NIR pour le contr\u00f4le en ligne des confiseries<\/strong><\/h2>\n<p data-start=\"451\" data-end=\"973\">L\u2019objectif \u00e9tait clair : <strong>remplacer des contr\u00f4les analytiques ponctuels, destructifs et lents par une m\u00e9thodologie non invasive, pr\u00e9cise et int\u00e9gr\u00e9e au processus, capable de r\u00e9duire les pertes,<\/strong> d\u2019acc\u00e9l\u00e9rer la prise de d\u00e9cision et de renforcer la constance du produit final.<\/p>\n<h3 data-start=\"975\" data-end=\"1050\"><strong>Formulation des confiseries et qualit\u00e9 : prot\u00e9ines, eau et glucides<\/strong><\/h3>\n<p data-start=\"1052\" data-end=\"1835\">Le projet s\u2019appuie sur une r\u00e9alit\u00e9 bien connue du secteur : la<strong> formulation des confiseries d\u00e9pend de plus en plus des performances des ingr\u00e9dients<\/strong>. Conna\u00eetre avec pr\u00e9cision la teneur en prot\u00e9ines, en glucides et en eau est essentiel pour la valeur nutritionnelle, la rh\u00e9ologie du proc\u00e9d\u00e9 et, en d\u00e9finitive, pour les propri\u00e9t\u00e9s organoleptiques.<br data-start=\"1395\" data-end=\"1398\">Cependant, les techniques conventionnelles \u2014 qui exigent pr\u00e9paration d\u2019\u00e9chantillon, personnel sp\u00e9cialis\u00e9 et d\u00e9lais d\u2019analyse \u00e9lev\u00e9s \u2014 compliquent le contr\u00f4le en ligne, la r\u00e9duction des \u00e9carts et l\u2019automatisation. C\u2019est pourquoi nous avons \u00e9tudi\u00e9 une alternative fond\u00e9e sur la<strong> spectroscopie NIR<\/strong> (750\u20132 500 nm) qui, appuy\u00e9e sur la loi de Lambert-Beer, permet de corr\u00e9ler des empreintes spectrales \u00e0 des param\u00e8tres analytiques de r\u00e9f\u00e9rence.<\/p>\n<h3 data-start=\"1837\" data-end=\"1891\"><strong>M\u00e9thodologie NIR en conditions r\u00e9elles d\u2019usine<\/strong><\/h3>\n<p data-start=\"1893\" data-end=\"2693\">Pour garantir la repr\u00e9sentativit\u00e9, nous avons travaill\u00e9 avec <strong>TROLLI<\/strong> dans des conditions \u00e9quivalentes \u00e0 celles de l\u2019usine. \u00c0 partir de trois recettes, nous avons fait varier la proportion de g\u00e9latine (collag\u00e8ne) du double de la quantit\u00e9 initiale jusqu\u2019\u00e0 son \u00e9limination totale, couvrant ainsi une large gamme de formulations r\u00e9elles.<br data-start=\"2229\" data-end=\"2232\">Les mesures ont \u00e9t\u00e9 r\u00e9alis\u00e9es avec un <strong>spectrophotom\u00e8tre NIR<\/strong> \u00e9quip\u00e9 d\u2019une sonde d\u2019immersion et d\u2019une lampe halog\u00e8ne. Parall\u00e8lement, la teneur r\u00e9elle en prot\u00e9ines a \u00e9t\u00e9 d\u00e9termin\u00e9e par analyse volum\u00e9trique dans le laboratoire d\u2019Analyse Chimique d\u2019AINIA.<br data-start=\"2482\" data-end=\"2485\">Avec les deux ensembles de donn\u00e9es \u2014 spectres et valeurs de r\u00e9f\u00e9rence \u2014 nous avons construit et ajust\u00e9 un <strong>mod\u00e8le pr\u00e9dictif bas\u00e9 sur une r\u00e9gression par moindres carr\u00e9s partiels<\/strong> (<em data-start=\"2662\" data-end=\"2691\">PLS \u2013 Partial Least Squares<\/em>).<\/p>\n<h3><strong><img decoding=\"async\" class=\"alignnone wp-image-183975 size-full\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/11\/modelizacion.png\" alt=\"modelizacion\" width=\"417\" height=\"313\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/11\/modelizacion.png 417w, https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/11\/modelizacion-300x225.png 300w\" sizes=\"(max-width: 417px) 100vw, 417px\"><\/strong><\/h3>\n<h3 data-start=\"2695\" data-end=\"2765\"><strong>Mod\u00e9lisation PLS : pr\u00e9cision dans la pr\u00e9diction de la prot\u00e9ine<\/strong><\/h3>\n<p data-start=\"2767\" data-end=\"3522\">Les r\u00e9sultats confirment la viabilit\u00e9 de la solution. Nous avons obtenu un<strong> mod\u00e8le pr\u00e9dictif NIR<\/strong> de la teneur en prot\u00e9ines avec une erreur moyenne en validation crois\u00e9e de 0,49 % sur une plage de 0 \u00e0 11 % de prot\u00e9ines, et un coefficient de d\u00e9termination (R\u00b2) de 0,975.<br data-start=\"3034\" data-end=\"3037\">Ces indicateurs montrent une pr\u00e9cision \u00e9lev\u00e9e pour estimer rapidement et de mani\u00e8re non destructive un param\u00e8tre cl\u00e9 de qualit\u00e9 comme le pourcentage de prot\u00e9ines dans la masse de confiserie.<br data-start=\"3227\" data-end=\"3230\">Au-del\u00e0 des m\u00e9triques, l\u2019essentiel r\u00e9side dans ce que permet ce mod\u00e8le : <strong>un contr\u00f4le continu du processus, la d\u00e9tection pr\u00e9coce des \u00e9carts et une capacit\u00e9 de correction imm\u00e9diate<\/strong>, conduisant \u00e0 une r\u00e9duction des pertes, une plus grande stabilit\u00e9 du produit et une prise de d\u00e9cision plus agile.<\/p>\n<h3><strong><img decoding=\"async\" class=\"alignnone wp-image-183970 size-full\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/11\/grafico-trolli.png\" alt=\"grafico trolli\" width=\"567\" height=\"310\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2025\/11\/grafico-trolli.png 567w, data-end=\"3582\"><strong>Supervision en temps r\u00e9el et int\u00e9gration SCADA\/MES<\/strong><\/h3>\n<p data-start=\"3584\" data-end=\"4360\">L\u2019\u00e9tape naturelle suivante consiste \u00e0 int\u00e9grer le<strong> syst\u00e8me NIR en ligne<\/strong> dans des points critiques tels que le malaxage, le moulage ou le s\u00e9chage, en le connectant aux syst\u00e8mes de supervision et de contr\u00f4le pour fermer le cycle d\u00e9cisionnel.<br data-start=\"3822\" data-end=\"3825\">Notre exp\u00e9rience d\u00e9montre que le maintien du mod\u00e8le \u2014 avec des recalibrations ponctuelles li\u00e9es aux changements de recette ou de mati\u00e8res premi\u00e8res \u2014 garantit sa robustesse \u00e0 long terme et maximise le retour sur investissement.<br data-start=\"4052\" data-end=\"4055\">La collaboration avec <strong>TROLLI <\/strong>a \u00e9t\u00e9 d\u00e9terminante pour valider la technologie dans des conditions r\u00e9elles : leur connaissance du proc\u00e9d\u00e9, associ\u00e9e \u00e0 notre expertise analytique et en mod\u00e9lisation, a permis de transformer une hypoth\u00e8se technologique en un outil op\u00e9rationnel \u00e0 impact direct en production.<\/p>\n<h3 data-start=\"4362\" data-end=\"4439\"><strong>De l\u2019analyse hors ligne au contr\u00f4le de processus bas\u00e9 sur les donn\u00e9es<\/strong><\/h3>\n<p data-start=\"4441\" data-end=\"4835\">Si tu fabriques des confiseries ou d\u2019autres aliments dont la composition conditionne le proc\u00e9d\u00e9, AINIA peut t\u2019aider \u00e0 mesurer en temps r\u00e9el les technologies spectrales capables de d\u00e9terminer les propri\u00e9t\u00e9s des confiseries g\u00e9lifi\u00e9es.<br data-start=\"5072\" data-end=\"5075\">CANDYSPECT s\u2019int\u00e8gre au<strong> projet strat\u00e9gique ECOFOOD<\/strong> \u2013 \u00ab Adaptation scientifique et technologique des cha\u00eenes de valeur agroalimentaires pour une transition durable, \u00e9cologique et num\u00e9rique \u00bb (code PAG-010000-2023-15), qui stimule l\u2019innovation technologique du secteur vers des proc\u00e9d\u00e9s plus num\u00e9riques, efficaces et durables.<\/p>\n<p data-start=\"5401\" data-end=\"5602\">Le projet ECOFOOD est promu par le Minist\u00e8re de l\u2019Industrie et du Tourisme, dans le cadre du Plan de Relance, de Transformation et de R\u00e9silience,
