Dans ce contexte, l\u2019<\/span><b><span data-contrast=\"auto\">extrusion<\/span><\/b><span data-contrast=\"auto\"> s\u2019est impos\u00e9e comme la voie industrielle cl\u00e9 pour cr\u00e9er des textures proches de la viande \u2014 via l\u2019<\/span><b><span data-contrast=\"auto\">extrusion \u00e0 faible humidit\u00e9<\/span><\/b><span data-contrast=\"auto\"> (TVP) ou l\u2019<\/span><b><span data-contrast=\"auto\">extrusion \u00e0 forte humidit\u00e9<\/span><\/b><span data-contrast=\"auto\"> (HMEC).
