Dans ce contexte, la viande cultiv\u00e9e se pr\u00e9sente comme une alternative innovante et respectueuse de l\u2019environnement. Cependant, sa production \u00e0 grande \u00e9chelle fait encore face \u00e0 des d\u00e9fis technologiques et de recherche.<\/strong><\/p>\n<p data-start=\"447\" data-end=\"806\">Chez <strong data-start=\"452\" data-end=\"461\">AINIA<\/strong>, \u00e0 travers le projet <strong data-start=\"483\" data-end=\"498\">MEAT4FUTURE<\/strong>, nous cherchons \u00e0 faire progresser le d\u00e9veloppement de solutions pour am\u00e9liorer les processus de production de viande cultiv\u00e9e, en abordant des aspects cl\u00e9s tels que la s\u00e9curit\u00e9 alimentaire, la formulation de supports cellulaires durables et l\u2019optimisation des bior\u00e9acteurs pour la scalabilit\u00e9 industrielle.<\/p>\n<h2 data-start=\"808\" data-end=\"880\"><strong data-start=\"812\" data-end=\"880\">Nouvelles strat\u00e9gies pour le d\u00e9veloppement de la viande cultiv\u00e9e<\/strong><\/h2>\n<p data-start=\"881\" data-end=\"1064\">Dans le cadre du projet <strong data-start=\"905\" data-end=\"920\">MEAT4FUTURE<\/strong>, nous abordons diff\u00e9rents fronts technologiques pour am\u00e9liorer la production de viande cultiv\u00e9e, en nous concentrant sur les aspects suivants :<\/p>\n<ul data-start=\"1066\" data-end=\"2271\">\n<li data-start=\"1066\" data-end=\"1335\">\n<p data-start=\"1068\" data-end=\"1335\"><strong data-start=\"1068\" data-end=\"1107\">S\u00e9curit\u00e9 de l\u2019ingr\u00e9dient cellulaire<\/strong> : Nous analyserons la s\u00e9curit\u00e9 alimentaire des cellules utilis\u00e9es dans la production, y compris la d\u00e9tection de pathog\u00e8nes et de contaminants, et la caract\u00e9risation des cultures cellulaires au fur et \u00e0 mesure de leur \u00e9volution.<\/p>\n<\/li>\n<li data-start=\"1336\" data-end=\"1566\">\n<p data-start=\"1338\" data-end=\"1566\"><strong data-start=\"1338\" data-end=\"1391\">D\u00e9veloppement de supports cellulaires comestibles<\/strong> : Nous explorerons les prot\u00e9ines v\u00e9g\u00e9tales et les polysaccharides pour cr\u00e9er des structures de support qui am\u00e9liorent la texture et la valeur nutritionnelle du produit final.<\/p>\n<\/li>\n<li data-start=\"1567\" data-end=\"1847\">\n<p data-start=\"1569\" data-end=\"1847\"><strong data-start=\"1569\" data-end=\"1623\">Optimisation des bioproc\u00e9d\u00e9s dans les bior\u00e9acteurs<\/strong> : Nous \u00e9tudierons les param\u00e8tres op\u00e9rationnels cl\u00e9s dans la propagation et la diff\u00e9renciation cellulaire, en comparant les lign\u00e9es cellulaires de mammif\u00e8res et d\u2019oiseaux, dans le but d\u2019am\u00e9liorer la scalabilit\u00e9 du processus.<\/p>\n<\/li>\n<li data-start=\"1848\" data-end=\"2039\">\n<p data-start=\"1850\" data-end=\"2039\"><strong data-start=\"1850\" data-end=\"1884\">Formulation et post-traitement<\/strong> : Nous explorerons des alternatives pour adapter le produit final gr\u00e2ce \u00e0 diff\u00e9rentes op\u00e9rations unitaires et des formulations adapt\u00e9es aux consommateurs.<\/p>\n<\/li>\n<li data-start=\"2040\" data-end=\"2271\">\n<p data-start=\"2042\" data-end=\"2271\"><strong data-start=\"2042\" data-end=\"2086\">Cadre r\u00e9glementaire et commercialisation<\/strong> : Nous mettrons \u00e0 jour les r\u00e9glementations applicables \u00e0 la viande cultiv\u00e9e pour faciliter son entr\u00e9e sur le march\u00e9 en tant que source de prot\u00e9ines alternatives durables et de qualit\u00e9.<\/p>\n<\/li>\n<\/ul>\n<h3 data-start=\"2273\" data-end=\"2334\"><strong>S\u00e9curit\u00e9 alimentaire et nouvelles lign\u00e9es cellulaires<\/strong><\/h3>\n<p data-start=\"2335\" data-end=\"2858\">L\u2019un des principaux d\u00e9fis de la viande cultiv\u00e9e est de garantir la<a href=\"https:\/\/www.ainia.com\/fr\/essais-en-digesteur-dynamique-in-vitro-bioaccessibilite-et-essais-en-culture-cellulaire-biodisponibilite\/\"><strong> s\u00e9curit\u00e9 alimentaire de l\u2019ingr\u00e9dient cellulaire<\/strong><\/a>. Dans <strong data-start=\"2456\" data-end=\"2471\">MEAT4FUTURE<\/strong>, nous d\u00e9velopperons une m\u00e9thodologie pour caract\u00e9riser la qualit\u00e9 et la s\u00e9curit\u00e9 des cellules, en analysant leur r\u00e9sistance aux contaminants et en \u00e9valuant leur reproductibilit\u00e9 dans diff\u00e9rents processus de sous-culture. De plus, nous \u00e9tendrons l\u2019\u00e9tude \u00e0 de nouvelles esp\u00e8ces, y compris certaines esp\u00e8ces de poissons, en optimisant les conditions de travail pour chaque type cellulaire.<\/p>\n<h3 data-start=\"2860\" data-end=\"2918\"><strong>Supports cellulaires innovants et bioimpression 3D<\/strong><\/h3>\n<p data-start=\"2919\" data-end=\"3501\">Le d\u00e9veloppement de structures permettant la croissance cellulaire est un aspect cl\u00e9 pour obtenir de la viande cultiv\u00e9e avec des caract\u00e9ristiques organoleptiques similaires \u00e0 celles de la viande conventionnelle. Dans <strong data-start=\"3136\" data-end=\"3151\">MEAT4FUTURE<\/strong>, nous \u00e9tudierons l\u2019application de prot\u00e9ines v\u00e9g\u00e9tales textur\u00e9es et de polysaccharides dans la formulation de supports cellulaires comestibles. Nous \u00e9valuerons la combinaison de diff\u00e9rentes prot\u00e9ines d\u2019origine v\u00e9g\u00e9tale pour am\u00e9liorer le profil nutritionnel et appliquerons la bioimpression 3D pour am\u00e9liorer la structure des \u00e9chafaudages cellulaires.<\/p>\n<h3 data-start=\"808\" data-end=\"880\"><strong>Viande cultiv\u00e9e: Optimisation des bior\u00e9acteurs et scalabilit\u00e9 industrielle<\/strong><\/h3>\n<p data-start=\"3569\" data-end=\"4141\">Pour que la <strong>viande cultiv\u00e9e<\/strong> soit viable \u00e0 l\u2019\u00e9chelle commerciale, il est essentiel d\u2019optimiser les conditions op\u00e9rationnelles dans les bior\u00e9acteurs. Dans <strong data-start=\"3722\" data-end=\"3737\">MEAT4FUTURE<\/strong>, nous \u00e9tudierons les param\u00e8tres critiques de propagation et de diff\u00e9renciation cellulaire dans les r\u00e9acteurs, en \u00e9valuant le transfert de mati\u00e8re, les temps de r\u00e9sidence et l\u2019effort de cisaillement. Nous utiliserons des outils de calcul avanc\u00e9s pour concevoir des syst\u00e8mes qui minimisent les probl\u00e8mes de cisaillement et optimisent la consommation de nutriments, r\u00e9duisant ainsi les co\u00fbts de production.<\/p>\n<h3 data-start=\"808\" data-end=\"880\"><strong>Viande cultiv\u00e9e: <\/strong><strong>Vers un mod\u00e8le de production plus durable<\/strong><\/h3>\n<p data-start=\"4193\" data-end=\"4638\">Avec le projet <strong data-start=\"4208\" data-end=\"4223\">MEAT4FUTURE<\/strong>, nous cherchons \u00e0 positionner <strong data-start=\"4254\" data-end=\"4263\">AINIA<\/strong> et la <strong data-start=\"4270\" data-end=\"4296\">Communaut\u00e9 Valencienne<\/strong> \u00e0 la pointe de la recherche sur la viande cultiv\u00e9e.
