Le d\u00e9fi technologique r\u00e9side dans l\u2019obtention de ces ingr\u00e9dients prot\u00e9iques de mani\u00e8re \u00e9conomique, techniquement viable et durable. Et c\u2019est ici que la technologie du CO2 supercritique joue un r\u00f4le fondamental. Nous vous l\u2019expliquons.<\/p>\n<p>Les consommateurs sont de plus en plus sensibles \u00e0 la protection de l\u2019environnement et \u00e0 la durabilit\u00e9 des produits qu\u2019ils ach\u00e8tent, ce qui stimule une croissance rapide de la demande internationale en prot\u00e9ines alternatives. Ces opportunit\u00e9s peuvent \u00eatre divis\u00e9es en deux grandes cat\u00e9gories : un secteur en plein essor qui propose des alternatives \u00e0 la viande \u00e0 base de prot\u00e9ines d\u2019origine v\u00e9g\u00e9tale, et \u00e0 plus long terme, la viande cultiv\u00e9e en laboratoire.<\/p>\n<p>En nous concentrant sur les \u00ab prot\u00e9ines v\u00e9g\u00e9tales \u00bb, cette opportunit\u00e9, qui ne concerne pas seulement le secteur alimentaire, puisque nous ne devons pas oublier le secteur des mat\u00e9riaux biosourc\u00e9s et biod\u00e9gradables, s\u2019est traduite par la publication d\u2019un grand nombre d\u2019articles techniques dans des revues sp\u00e9cialis\u00e9es au cours des derni\u00e8res ann\u00e9es (Figure 1).<\/p>\n<p><strong><img decoding=\"async\" class=\"alignnone wp-image-148328 size-full\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2022\/03\/Imagen1-1.png\" alt=\"grafico proteinas\" width=\"348\" height=\"198\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2022\/03\/Imagen1-1.png 348w, https:\/\/www.ainia.com\/wp-content\/uploads\/2022\/03\/Imagen1-1-300x171.png 300w\" sizes=\"(max-width: 348px) 100vw, 348px\"><\/strong><\/p>\n<div class=\"flex-shrink-0 flex flex-col relative items-end\">\n<div>\n<div class=\"pt-0\">\n<div class=\"gizmo-bot-avatar flex h-8 w-8 items-center justify-center overflow-hidden rounded-full\">\n<div class=\"relative p-1 rounded-sm flex items-center justify-center bg-token-main-surface-primary text-token-text-primary h-8 w-8\">Figure 1. Nombre de publications avec le descripteur \u201cPlant protein\u201d (Source : Scopus)<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<h3>Technologie d\u2019extraction supercritique au CO2 : Opportunit\u00e9 pour le d\u00e9veloppement d\u2019ingr\u00e9dients prot\u00e9iques d\u2019origine v\u00e9g\u00e9tale<\/h3>\n<p>Ainsi, les strat\u00e9gies de bioraffinage pour l\u2019exploitation int\u00e9grale des matrices d\u2019origine v\u00e9g\u00e9tale comme sources alternatives de nutriments repr\u00e9sentent des d\u00e9fis technologiques, notamment dans les \u00e9tapes d\u2019extraction et d\u2019isolement des prot\u00e9ines. C\u2019est dans ce domaine que la technologie d\u2019extraction supercritique au CO2 constitue une opportunit\u00e9 \u00e0 \u00e9valuer pour de nombreuses matrices, et qu\u2019\u00e0 AINIA nous d\u00e9veloppons intensivement depuis plusieurs ann\u00e9es.<\/p>\n<p>En nous concentrant, par exemple, sur les graines ol\u00e9agineuses, leur culture \u00e0 grande \u00e9chelle r\u00e9pond depuis des d\u00e9cennies \u00e0 l\u2019important moteur \u00e9conomique qu\u2019est la demande d\u2019huiles v\u00e9g\u00e9tales. Ainsi, ce grand march\u00e9 a favoris\u00e9 l\u2019optimisation des syst\u00e8mes de d\u00e9graissage afin de maximiser les rendements, r\u00e9duire les co\u00fbts et am\u00e9liorer la qualit\u00e9 finale des huiles.<\/p>\n<h3>CO<sub>2<\/sub> supercritique, technologie durable pour l\u2019extraction d\u2019huiles, de graisses, de c\u00e9r\u00e9ales, de fruits secs et de farines d\u2019insectes<\/h3>\n<p>Cependant, la qualit\u00e9 des prot\u00e9ines peut \u00eatre n\u00e9gativement affect\u00e9e par ces syst\u00e8mes conventionnels et plus largement utilis\u00e9s. Dans ce contexte, l\u2019utilisation du CO2 supercritique comme solvant pour l\u2019extraction d\u2019huiles, de graisses et d\u2019autres m\u00e9tabolites de ces matrices est une alternative technologique \u00e9conomique et techniquement viable, qui peut \u00e9galement \u00eatre extrapol\u00e9e \u00e0 d\u2019autres matrices comme les c\u00e9r\u00e9ales, les fruits secs ou les farines d\u2019insectes. De plus, le CO2 supercritique est propre, durable, adapt\u00e9 \u00e0 tous les march\u00e9s et aux produits labellis\u00e9s \u00e9cologiques.<\/p>\n<p>Ainsi, si l\u2019on change de perspective et que l\u2019on se concentre sur la matrice d\u00e9graiss\u00e9e plut\u00f4t que sur l\u2019huile, la technologie supercritique peut offrir des produits de meilleure qualit\u00e9, parfois gr\u00e2ce \u00e0 une pr\u00e9sence accrue de m\u00e9tabolites \u00e0 capacit\u00e9 antioxydante, parfois gr\u00e2ce \u00e0 une r\u00e9duction de la teneur en mati\u00e8res grasses (produits \u00e0 faible apport calorique utilis\u00e9s comme compl\u00e9ments ou ingr\u00e9dients dans les aliments destin\u00e9s aux sportifs), et parfois gr\u00e2ce \u00e0 une augmentation de la teneur en prot\u00e9ines suite au d\u00e9graissage.
