In this article we explain what has caused this risk and how to address it.<\/p>\n<ul>\n<li><strong><a href=\"#alerta-alimentaria-listeria-evolucion-de-los-casos\">Listeria food alert: evolution of cases<\/a><\/strong><\/li>\n<li><strong><a href=\"#que-exige-la-legislacion-europea\">What does European legislation require?<\/a><\/strong><\/li>\n<li><strong><a href=\"#como-afrontar-el-riesgo-de-listeria-monocytogenes\">How to address the risk of Listeria monocytogenes?<\/a><\/strong><\/li>\n<li><strong><a href=\"#herramientas-disponibles-para-validar-la-vida-util\">Tools available to validate shelf life<\/a><\/strong><\/li>\n<\/ul>\n<article><!-- BLOCK 1 -->\n<section>\n<h2 id=\"alerta-alimentaria-listeria-evolucion-de-los-casos\">Listeria food alert: evolution of cases<\/h2>\n<p>Between 2020 and 2025, multiple incidents related to the presence of <em>Listeria monocytogenes<\/em> in food have occurred, as well as outbreaks of listeriosis that have affected public health in different countries.<\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-188579 size-large\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-1-1-1024x680.jpg\" alt=\"Listeria cases in different years\" width=\"1024\" height=\"680\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-1-1-1024x680.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-1-1-300x199.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-1-1-768x510.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-1-1.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/p>\n<p>This demonstrates that <em>Listeria monocytogenes<\/em> remains a priority pathogen in microbiological surveillance, especially in:<\/p>\n<ul>\n<li>Soft cheeses<\/li>\n<li>Smoked fish<\/li>\n<li>Ready-to-eat meat products<\/li>\n<\/ul>\n<\/section>\n<p><!-- BLOCK 2 --><\/p>\n<section>\n<h2 id=\"que-exige-la-legislacion-europea\"><img decoding=\"async\" class=\"alignnone wp-image-188574 size-large\" src=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-2-1-1024x680.jpg\" alt=\"Listeria comparison chart for Spain and Europe\" width=\"1024\" height=\"680\" srcset=\"https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-2-1-1024x680.jpg 1024w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-2-1-300x199.jpg 300w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-2-1-768x510.jpg 768w, https:\/\/www.ainia.com\/wp-content\/uploads\/2026\/03\/grafico-2-1.jpg 1200w\" sizes=\"(max-width: 1024px) 100vw, 1024px\"><\/h2>\n<h2>What does European legislation require?<\/h2>\n<p>The amendment of <strong>Regulation (EU) 2073\/2005 through Regulation (EU) 2024\/2895<\/strong> responds to the need to <a href=\"https:\/\/www.ainia.com\/en\/laboratory-services\/studies-and-other-services\/challenge-test\/\"><strong>guarantee consumer protection throughout the entire shelf life of the product<\/strong><\/a>, to the evidence of <em>Listeria monocytogenes<\/em> growth outside the direct control of the producer and to the need to establish uniform microbiological criteria across the entire food chain.<\/p>\n<p>It introduces important changes in food safety criteria, particularly for ready-to-eat foods:<\/p>\n<table>\n<thead>\n<tr>\n<th>Microbiological criterion<\/th>\n<th>Application<\/th>\n<\/tr>\n<\/thead>\n<tbody>\n<tr>\n<td><strong>Absence in 25 g<\/strong><\/td>\n<td>Mandatory when it cannot be demonstrated that Listeria will not exceed 100 cfu\/g during shelf life<\/td>\n<\/tr>\n<tr>\n<td><strong>\u2264 100 cfu\/g<\/strong><\/td>\n<td>Only applicable if the operator scientifically demonstrates that growth is controlled<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n<p>These measures will apply from <strong>1 July 2026<\/strong>. From that moment on, the operator will be responsible for ensuring compliance throughout the entire shelf life.<\/p>\n<\/section>\n<p><!-- BLOCK 3 --><\/p>\n<section>\n<h2 id=\"como-afrontar-el-riesgo-de-listeria-monocytogenes\">How to address the risk of <em>Listeria monocytogenes<\/em>?<\/h2>\n<p>New consumption trends, together with regulatory changes, require the food industry to adopt a rigorous and multifactorial approach to prevent the development of <em>Listeria monocytogenes<\/em>, especially in ready-to-eat foods. <strong>To achieve this, action must be taken on several fronts:<\/strong><\/p>\n<ul>\n<li>Establish, validate and verify the shelf life of the food.<\/li>\n<li>Review formulations.<\/li>\n<li>Environmental and biofilm control.<\/li>\n<li>Advanced analytical methods.<\/li>\n<li>Documentation management and HACCP.<\/li>\n<li>Staff training.<\/li>\n<\/ul>\n<\/section>\n<p><!-- BLOCK 4 --><\/p>\n<section>\n<h2 id=\"herramientas-disponibles-para-validar-la-vida-util\">Tools available to validate shelf life<\/h2>\n<p><strong>Shelf-life validation<\/strong> in ready-to-eat foods requires specific tools that allow the evaluation of microbiological risk. Among the most relevant are <a href=\"https:\/\/www.ainia.com\/en\/laboratory-services\/studies-and-other-services\/challenge-test\/\"><strong>growth potential studies.<\/strong><\/a><\/p>\n<p>To carry them out, the technical guidelines of the <strong>European Union Reference Laboratory for <em>Listeria monocytogenes<\/em> (EURL Lm)<\/strong> are followed, as set out in its technical document on challenge tests and durability studies.
