To achieve this, action must be taken on several fronts:<\/strong><\/p>\n \n Establish, validate and verify the shelf life of the food.<\/li>\n Review formulations.<\/li>\n Environmental and biofilm control.<\/li>\n Advanced analytical methods.<\/li>\n Documentation management and HACCP.<\/li>\n Staff training.<\/li>\n<\/ul>\n<\/section>\n <\/p>\n \n Tools available to validate shelf life<\/h2>\n Shelf-life validation<\/strong> in ready-to-eat foods requires specific tools that allow the evaluation of microbiological risk. Among the most relevant are growth potential studies.<\/strong><\/a><\/p>\n To carry them out, the technical guidelines of the European Union Reference Laboratory for Listeria monocytogenes<\/em> (EURL Lm)<\/strong> are followed, as set out in its technical document on challenge tests and durability studies.
